Each hand-cut roast is taken from the large end of the whole tenderloin, offering the same melt-in-your-mouth texture and mild flavor as our center-cut filet mignon and Chateaubriand. Every roast is hand-wrapped with savory strips of hickory-smoked beef bacon, adding a rich, smoky flavor to this classic cut.
